Allowed to breathe sufficiently, in a generous glass or the decanter, the nose reveals scents of plum jam, spiced with black pepper, juniper berries and earthy tobacco. There are hints of leather and peat, with undertones of coffee, scents of balsam and graphite and, at the end, cedar wood and eucalyptus. This broad range of aromas merges in the mouth with the glycerol and heat of the alcohol, a subtle minerality and the rounded solidity of the soft, mellow tannins. Food matching: Go for rich flavours: roast pork with apple and plum sauce, beef braised in wine, stewed venison or a stew of wild boar with duchesse potatoes.
