Delicate and not overly insistent on the nose, with its typical stamp of greenery, tomato leaf and boxwood, and a more penetrating iodine minerality. In the mouth, the flavour is forthright, carried assuredly through acid freshness and a pronounced minerality by the harmonious balance of alcohol and glycerol. Food matching: A perfect partner to oysters or sautéed mussels, not to mention spaghetti with clams, fish broth or any sort of raw fish. It can also be enjoyed with sliced meats such as Parma Ham or culatello.
